Baked Peach Cobbler French Toast

This Baked Peach Cobbler French Toast has Flaky croissants layered with sweetened canned peaches and a brown sugar custard then topped with a streusel topping.

If love a delicious French toast and need a crowd pleaser then this one is for you! This recipe combines flaky croissants, canned peaches, a brown sugar custard and a strudel topping. I mean talk about delicious. Not only is this recipe delicious it’s super easy to throw together and can be done the night before then thrown into the oven the next morning.

Overnight French Toast Casserole

If you love a simple no fuss recipe then look no further. It’s called overnight French toast because you prep the French toast casserole the night, chill then bake off in the morning. By letting the casserole sit overnight, it allows the bread to soak up all of that delicious custard and gives the French toast the perfect texture.

Baked Peach Cobbler French Toast

For this recipe, I highly recommend (but optional) using stale croissants or slightly toasted croissants. This helps with making sure the bread doesn’t get too soggy. While I’m gathering all of the ingredients I just pop my rolls into the oven for about 5 min, just until they have a slight crisp to them. Be sure to let cool before adding to the custard. If you add the hot croissants to the custard you’ll run the chance of cooking the eggs….we don’t want that.

For this baked French toast casserole recipe, you’ll need a 9×13 casserole dish. I like to add a layer of drained peaches to the bottom of the pan then layer the croissants on top of the peaches. After I pour over the custard, add any remaining peaches and top with the strudel. There is no right or wrong way to layer this peach french toast casserole. I like to just make sure that every portion of baked french toast will have a few pieces of peaches in there.

Ingredients

  • Croissants: Toasting them just a bit then allow to cool before using. Add to the casserole dish.
  • Canned Peaches: Drain the peaches before adding to the casserole dish.
  • Eggs + Whole Milk: Whisk together in a medium bowl.
  • Cinnamon + Vanilla Extract: Add into the milk/egg mix and whisk until completely combined.

How long will it last?

To store overnight french toast, cover tightly with foil or plastic wrap. The casserole will keep in the fridge for 2 days when wrapped properly.

How to reheat overnight french toast?

The best way to reheat this Overnight Baked Peach Cobbler French Toast is either on the stove top or in the oven. Simply put a square of french toast in a non-stick pan over medium- low heat. Cover with a small lid and allow to heat for 1-2 minutes. If you have a little more time, I would suggest reheating in the oven for 5-10 minutes or until heated through.

Ingredients

Cinnamon Peaches

  • 2-15 oz Canned Peaches in juice, drained
  • 1/4 teaspoon Cinnamon
  • 1/8 teaspoon Nutmeg
  • 1 Tablespoon Granulated Sugar

Custard

  • 12 oz Mini Croissants stale or toasted
  • 2/3 cup Brown Sugar
  • 6 Eggs
  • 1 teaspoon Cinnamon
  • 1 Tablespoon Vanilla Extract
  • 1 cup Heavy Cream
  • 1 cup Milk

Streusel Topping

  • 1/4 cup Light Brown Sugar
  • 1/4 cup Granulated Sugar
  • 1 teaspoon Cinnamon
  • 1 Tablespoon Unsalted Butter cubed, cold

Instructions

  • 1. Preheat the oven to 350 degrees Fahrenheit. Spray a 9×13 baking dish with non stick baking spray and set aside.
    2. Toast the bread in the oven for 5 minutes then set aside to allow to cool.
    3. In a medium bowl, whisk together the brown sugar, heavy cream, milk, vanilla, cinnamon and eggs until well combined.
    4. In a separate bowl, mix the drained peaches with cinnamon, nutmeg, and sugar.
    5. Lastly, in a small bowl mix together the brown sugar, sugar, cinnamon and butter with a fork. Mix until all butter is mixed in and clumps form. Set aside in the fridge until right before baking.
    6. To assemble, layer the croissants in the bottom of the baking dish. Next, layer the peaches into between the croissants. Pour the custard over the bread and peaches. Cover with foil and allow to chill for 4-8 hours, preferably overnight.
    7. When ready to bake, preheat the oven to 375 degrees Fahrenheit. Sprinkle the streusel topping over the casserole then bake for 45-60 minutes. If you like french toast on the softer side, take it out closer to 45 minutes.
